- Pulses along with beneficial and nutritional components also consist of a part of toxic constituents as well.
- These toxic substances include some of trypsin inhibitors and Haemagglutinins.
- An enzyme called Trypsin is a digestive enzyme as name suggests trypsin inhibitor causes hindrance in working of these digestive enzymes.
- Haemagglutinin combine with the iron component of the hemoglobin, which is called ‘haeme’ and hence hinders its functioning.
