Not every stainless steel vessel at the Indian kitchen seems to have copper coated bottom.
Copper coating helps in faster heat conduction & more even heating of the vessel however it add up more cost.
However, the stainless steel vessels seem to have longer life however it is not upgraded yet in several kitchens.
