Acetic acid present in vinegar will readily react with baking soda (sodiumbicarbonate) to form sodium acetate with the effervescence of carbon dioxide. The equation for the reactionis: CH3COOH + NaHCO3 = CH3COONa + CO2 + H2O.

Baking soda is NaHCO3

When baking soda is heated, the following reaction takes place:

2NaHCO3 -------> Na2CO3 + H2O + CO2

The CO2 produced make the bread or cake soft and spongy.
