Mouth
(1) SALIVARY GLANDS: They secrete saliva which contains the enzyme
Salivary Amylase which helps to breakdown complex starch into
maltose. It wets the food so that its passage through the alimentarycanal
becomes easier.
(2) TEETH: Help to crush and grind the food properly into smaller particles.
(3) TONGUE: It helps to mix the food properly and push it forward.
Ques. How does the foodmoves through the alimentarycanal?
Ans. The food is pushed forward through the entire alimentary canal due to
the rhythmic contraction of muscles of this canal and this movement is called as
peristaltic movement/ peristalsis. From the mouth the food reachesthe
stomach through the esophagus.

Stomach
It is lined by Gastric Glands which secretes: -
a) Mucus: It helps to protect the inner lining of the stomach from
being corroded by the actions of HCl under normal conditions.
b) HCl: It makes the medium acidic. It kills the germs in the
stomach.
c) Pepsin: It breaks down proteinsinto smaller particles.
d) Gastric Lipase: It breaks down the fats into smaller particles. From
the stomach the food moves into small intestine and the
exit of the food from the stomach is regulated by a sphincter
muscle which releases the food in small amounts into the small
intestine.
