Salivary amylase, secreted by serous acini in the salivary glands. This protein is made up of 496 amino acids. The function of salivary amylase is similar to the pancreatic amylase. It breaks down carbohydrates thus partially digesting carbohydrates in the mouth, moreover, it plays a role in the digestion of simple carbohydrates in the mouth before it goes to the stomach. Salivary amylase requires acidic pH to function.
