The best-known disaccharide issucrose (table sugar). Hydrolysis of sucrose yields glucose and fructose. Invertase is a sucrase used industrially for thehydrolysis of sucrose to so-called invert sugar.

Sucrose has 1 mole of D-glucose and D-fructose which is linked through glycocidic bond linked at 1 and 4 carbon.


When Sucrose is hydrolysed in the presence of Hydrochloric acid in the alcoholic medium, a mixture of glucose and fructose is obtained as the products.  


C6H22O11 +H2O ——-HCl--> C6H12O6 + C6H12O6

SUCROSE                                  D-GLUCOSE      D-FRUCTOSE
