Cellulose is a straight chain polysaccharide of β-glucose units linked by β-1,4- glycosidic bonds. Chemical hydrolysis of cellulose requires use of concerntrated strong acids at high temperature and pressure. This implies that the β-1,4- glycosidic bond is very strong and difficult to hydrolyse. Humans do not have enzymes which can hydrolyse this linkage. Hence cellulose cannot be digested by human beings; it serves as the fibrous content of food useful for bowel movement. shows the Haworth formula of cellulose.
