LACTASE: Lactase (a member of the beta-galactosidase group of enzymes) splits milk sugar (lactose) into the two simple sugars glucose and galactose. Found exclusively in mammalian milk, lactose is only one sixth as sweet as cane or beet sugar (sucrose).
