During idli batter fermentation, the predominant microfloras present are Leuconostoc mesenteroides, Streptococcus faecalis, Pediococcus cerevisiae which are responsible for leavening and acidification (Mukherjee et al., 1965). The fermentation of idli batter occurs due to the presence of certain microorganism viz.

2. DOSA....

Leuconostoc mesenteroides, Streptococcus faecalis, Lactobacillus fermentum and Bacillus amyloliquefaciens were the predominant bacteria responsible for souring and leavening of dosa batter. Yeasts whenever present, belonged mainly to Saccharomyces cerevisiae, Debaryomyces hansenii and Trichosporon beigelli.

3. YOGHURT....

bulgaricus to produce lactic acid, which acts on milk protein to give yoghurt its texture and its characteristic acidic taste. Other bacteria found in yoghurt are Lactobacillus acidophilus or casei, Streptococcus salivarius subsp. thermophilus and Bifidobacterium bifidus.

4. BREAD....

Yeast (Saccharomyces cerevisiae) contributes both to the texture and flavour of bread. A dough is made by mixing yeast with flour, salt and water. The yeast ferments sugars in the mixture to make alcohol and bubbles of carbon dioxide.

5. POTATO CURRY....
