Pepsin is an endopeptidase that breaks down proteins into smaller peptides (that is, a protease). It is produced in the stomach and is one of the main digestive enzymes in the digestive systems of humans and many other animals, where it helps digest the proteins in food.

Since bile increases the absorption of fats, it is an important part of the absorption of the fat-soluble substances, such as the vitamins A, D, E, and K. Besides its digestive function, bile serves also as the route of excretion for bilirubin, a byproduct of red blood cells recycled by the liver.

1. bile juice is responsible for the emulsification of the fats.

2. Duodenal mucosal bicarbonate secretion plays an important role in the defense  against acid discharged from the stomach.

3. Pancreatic amylase digests starch to maltose.
