If you mean what cannot we see because of the limited nature of our senses, then gravity, electricity, magnetism, the strong and the weak forces, dark energy and dark matter, anything small, time, the past and the future (if they exist), most of the electromagnetic spectrum, the Higgs field, any other field (except the green variety), over the horizon, so many things, the list is endless.
If you mean what do our five or so senses get in the way of seeing, I don't believe they do. I guess if we did not have them, we would have developed others, and they would still sense similar things; but as it stands they don't stop us sensing things
