There are four main reasons

3 They can be carved and moulded in to any fancy shapes and sizes. That is also true for metals but moulding plastic is much more economical than moulding and casting metals.
4 The last but not the least is the cost of manufacturing. Metals are very expensive compared to plastic. A 20gm plastic handle instead of metal handle can bring down the cost of the article by Inr 5–10 in material cost. Add to that the cost of shaping metal, polishing, etc. as compared to plastic and the costing can go down by Inr 10–20.
Thus you can get a more affordable, yet fancy looking article that also does less damage to itself and utensils around.
