There is a big difference in both the transports .Xylem transports water unidirectionally as it is required most by the leaves ...Phloem transports food in all directions as it is absorbed as minerals from soil and also made in leaves as glucose ..so through leaves it transports to growing parts of stem and roots and from roots to upper parts where those minerals are required..so food transport is in the direction which it is nexessary....whereas water is transported unidirectional only
