Unlike many other substances such as fruit juice, food dyes or even sugar and salt, oils do not mix with water. The reason is related to the properties of oil and water. Water molecules are made up of one oxygen atom and two hydrogen atoms.

Liquid water is held together by hydrogen bonds. Oils and fats not have any polar part and so for them to dissolve in water they would have to break some of water's hydrogen bonds. Water will not do this so the oil is forced to stay separate from the water.

Here is the other reason for not mixing of oil and water - As the density of water is more than that of density of oil, oil will float on water and does'nt mix easily.

Oil and water don't mix because water molecules are more attracted to each other than to oil molecules. Detergent molecules are attracted to both water and oil. When you add the detergent , one end of each a detergent molecule attaches to a water molecule and the attaches to an oil molecule.

Water molecules are made of two hydrogen atoms and one oxygen atom each.

Oil is made of many hydrocarbons.
