Yeast is added to the batter containing the maida so that fermentation takes place in the batter. Fermentation is basically the metabolic processes which produces a change in the organic substances which is produced here in the batter, to form a new substance by the action of various other enzyme on it. Alcoholic fermentation in yeast produces ethyl alcohol instead of lactic acid as a waste product of the fermentation.
