Yeast is added to dosa's batter so that the process of fermentation can take place. The process of fermentation takes around 8 hours and so it is suggested to keep the batter of dosa for 8 hours before preparing one. Fermented dosa's are good for health as they help is digestion and are good for cholesterol as well.
