Yeast lives on sugar. In dough yeast decomposes sugars into Carbon Dioxide and Alcohol. The Carbon Dioxide comes out and makes the dough rise.
Cakes and Breads are made by the help of yeast. The yeast reproduces very fast at suitable temperature and produces carbon- dioxide by the help of Fermentation of sugar.
As more and more gas is produced the dough rises in volume which makes breads and cakes porous and spongy.
