The water inside of a coconut is an essential part of its survival strategy. We have all seen pictures if not actual examples of this; coconut palms growing at the very edge of tropical islands, trees growing where little else will grow. HOW? The coconut fruit is a sealed boat that will float, and if it falls or is “washed” into an ocean, it bobs along until it is washed up on a shore somewhere. It starts the growth process, but slowly; it holds off sinking its tap root until it is no longer floating. Then it proceeds to send down its root and up its canopy, using the nutrients and water stored inside its seed shell! What else can do this? If it finds itself surrounded by too much other vegetation, it will lean out to get more sunshine, often leaning out over the ocean, where it will eventually drop new seeds into the water to float off to another speck of land. It carries enough nutrients and water to grow to 4 or 5 feet and survive for months, until rain washes nutrients and water to the growing tree!
