  • In India, the Portuguese founded a colony at the start of the 16th century. Cochin served as the first capital of Portuguese India, followed by Goa.
  • Portuguese rule expanded throughout India during the course of the following four centuries, primarily along the west coast of the continent but also in Bengal in the northeast.
  • The Portuguese left their mark on some Indian cuisines during this time in two different ways: by bringing new ingredients to India, including spices that are now recognised as essential to Indian cuisine, and by introducing Portuguese dishes that were later modified to suit Indian culinary styles and preferences.
  • The latest European nation to reach India was the French East India Company (FEIC). They first established a factory in Surat, Gujarat, then another one in Masulipatnam (Andhra coast). At Chandernagore, they founded their first colony (Bengal). By the end of the seventeenth century, they had established a stronghold in Tamil Nadu's Pondicherry (now Puducherry), which is located along the Coromandel Coast.
  • The White Town, which exhibits French spirit in its urban design, streetscape, and architecture, is a prime example of French influence in Pondicherry. However, many outdated structures from the French era were dismantled. In partnership with the Pondicherry government, INTACH (Indian National Trust for Art and Cultural Heritage) has renovated a few historic mansions.
