because the tarnishing layer on copper vessels consists of basic calcium carbonate
due to acidic nature,sour substance react with this base and hence neutralisation reaction takes place which in turn removes the layer of calcium carbonate.thats why it is used...

copper reacts with moist carbon dioxide in air to form copper carbonate and as a result copper vessels loses its shiny brown surface forming a green layer of copper carbonate which is basic, the citric acid present in lemon or tamarind is acid so it neutralizes the basic copper carbonate and dissolves the layer.So tarnished copper vessels are cleaned with lemon or tamarind juice to give the surface of copper vessels in characteristic luster
