 If the fat containg food material left for a long time then it reacts with the oxygen present in the air and get oxidised.
the phenomenon is known as rancidity.
measures for its prevention are:
1)by refrigerating the food items.
2)by adding anti -oxidants.
3)by using air tight containers.
