When I was little I used to help my mother make pasta on our kitchen table every Sunday morning. We would make a well of flour, I would crack in the eggs, add a pinch of salt, and then she would incorporate it all together. We would take turns kneading it and then she would roll it out and cut the pasta. Afterwards we would make tomato sauce, sometimes with with sausages or meatballs when we had the money. I also remember how she would mix the Parmesan and Romano cheeses so that you would get a nice blend of nuttiness from the Parmesan and the acidic bite of the Romano. When my father got home, we would eat. The pasta was my favorite part of the meal and I would always have some sauce left over. For some reason I never wanted to eat it without any pasta but my father wouldn’t let me leave the table unless I finished all of my food. Even though it was delicious, I would struggle to finish those last fork full of sauce.
