a). the dough has increased in volume because of adding Yeast to it, Yeast is used to make bread dough. ... During fermentation, carbon dioxide is produced and trapped as tiny pockets of air within the dough. This causes it to rise. During baking the carbon dioxide expands and causes the bread to rise further.

b). yes, there is a change in both smell and taste of dough . it tastes sour and gives off a stale beer smell. It is because fermentation takes place which is an irreversible process.

c). irreversible process is observed here and it is used in making of bread.
