When lemon juice is added, it increases milk's acidity because lemon contains citric acid. When milk becomes acidic, the negative charge which keeps the casein separate is neutralized. Because of the lowering of pH, the calcium causes precipitation of casein and milk gets curdled. Then, we can separate it using a cheese cloth to get paneer or cottage cheese
