The ZINC  (Zn) wire discharge the green color of Ferrous Sulphate ( FeSO4), this is because zinc lies above Iron (Fe) in the reactivity series of metals. And the metal which lies above in the reactivity series displaces the metal lying below it from its salt solution. Zinc lying above Iron therefore displaces iron from ferrous sulphate to discharge green colour.

Similarly,  Iron wire (Fe) discharges blue colour from Copper Sulphate ( CuSO4) because Iron lies above Copper in the reactivity series and therefore displaces copper from Copper Sulphate to give blue colour.

The reactivity series of metals is a series in which the metals are arranged in the decreasing order of their reactivity.

Reactivity Series of Metals ( in the order of decreasing reactivity)

Symbol - Name of Metal

K - Potassium

Na - Sodium

Ba - Barium

Ca- Calcium

Mg - Magnesium

Al - Aluminium

Zn - Zinc

Fe - Iron

Ni - Nickel

Sn - Tin

Pb - Lead

[H} - Hydrogen

Hg - Mercury

Cu - Copper

Ag - Silver

Au - Gold

Pt - Platinum

the metals lying below  Hydrogen do not displace  Hydrogen from acids
