1 A milkman add a very small amount of baking soda to fresh milk.
(a) Why does he make the milk slightly alkaline?
(b) Why does the milk take a long time to set as a curd?​

(a)Because to preserve milk . Milk contains lactic acid which makes milk converted into curds.If base is used for slightly making the acid alkaline,from which the milk cannot be converted to curds.

(b)Because the acid is made alkaline as it takes a long term to set as a curd

Becoz baking soda is a base which reacts with acids and neutralizes it. This prevents milk from getting sour and keeping it fresh for long time...
