1. All matter isparticulate in nature. This basically means that between separate bits of matter there are spaces which contain no matter. In science it is called the "atomic nature of matter."
2. Evaporation is a surface phenomenon because it occurs in the surface. For example when we put wet clothes for drying we spread them out so that thesurface area gets increased. When the surface area increases the water will get enough space to get into vapour stage and thusevaporation happens easily.
