By law of conservation of mass

We can conclude that..

u_1  - v_1 = u_2 + v_2 \\  \\ v_1 + v_2 = u_2 - u_1

Put the equation in (1)

e =  -  \frac{(u_2 - u_1)}{u_1 - u_2}  \\  \\ e = 1

Note:

For elastic collision,

e = 1

For perfectly inelastic collision

e = 0

For any other collision

0 < e <1
