(a) A disaccharide (also called a double sugar or bivose) is the sugar formed when two monosaccharides (simple sugars) are joined by glycosidic linkage. Like monosaccharides, disaccharides are soluble in water. Three common examples are sucrose, lactose, and maltose.
(b) Sucrose is disaccharide, or a molecule made of two monosaccharides. Glucose and fructose are both monosaccharides, but together they make the disaccharide sucrose. This is an important process for the storage and compression of energy. Plants do this to make it easier to transport large amounts of energy, via sucrose.
(c) Mutarotation is the change in the optical rotation because of the change in the equilibrium between two anomers, when the corresponding stereocenters interconvert. Cyclic sugars show mutarotation as α and β anomeric forms interconvert.
