Scientific reason -

We can hold pencil between our fingers because of friction between our fingers and pen or pencil.

Another reason -

We can do these also because of long term of practice.

It is because of friction .

If you don't have physics background , I tell you value of friction force depends on two quantities , Type of surfaces like on rough surfaces have high value of friction then plain surfaces.

Second is normal force , which is a force perpendicular to surface .

To understand it think when you walk on slippery floor you put more pressure on your feet for better grip , by doing this you are increasing normal force and Friction.

Same logic with pencil you tight the grip to increase the friction and hold it . When you loose your grip friction decreases and as it comes less then gravity pencil fell down.
