1. Oil and fat containing food after some time develop foul smell and spoils the taste. It is knowb as rancidity.
2. It is ocurred due to slow oxidation of oil and fat. It is oxidative rancidity.
3. It has two another pathways :-
(i) Hydrolytic Rancidity
(ii) Microbial Rancidity
4. Consuming. rancid food products is unlikely to cause immediate illness or harm, although rancidification can reduce the nutritional value of food by degradation of nutrients.
5. It can be prevented by flushing food items with nitrogen gas or using antioxides.
