Well I think if a) both the samples are kept under a fan then evaporation will take place bcoz evaporation occurs with spped of air.
And if
b)both the samples are kept inside the cupboard then also it will evaporate same as a)...
but it will do evaporation slowly as air is also slow.

The evaporation Neill be greater in the China dish because it has a larger surface area . Also , when they will be kept in the cupboard , they will not be exposed to sunlight thus reducing rate of evaporation!
