It is because they have the water of crystallization.. These water molecules are bonded in such a manner that whenever the temperature of the surrounding is increased or they are directly exposed to heat they lose thses water molecules..
Blue salt is CusO4.5H2O has 5 units of water of crystallization..

Hydrated copper sulphate crystals [cuso4. 5H2o] are blue in color

When copper sulphate crystals are heated strongly they loose all water of crystallization and form anhydrous copper sulphate [which is white in color]

Cuso4. 5H2o-------->cuso4+5H2o

Hydrated Anhydrous
Copper sulphate copper
Sulphate

The water of crystallization gives the crystals of their salts their shape and color
