The gas released when a pinch of sodium bicarbonate is added to acetic acid , is carbon dioxide (CO2) . The release of CO2 and formation of water , causes brisk effervescence.
The reaction is ::-
CH3COOH + NaHCO3 ---------> CH3COONa + CO2 + H2O
The products are sodium acetate , carbon dioxide and water.
