When oily foods get oxidized, it is called food rancidity. When food becomes rancid, the two immediate changes in foods are seen are change of taste and change of small which turns into unpleasant odor.
Rancidity can be prevented by storing food away from dust and sunlight, and preserving them in cool dry place preferable in a well washed, dry, and air tight container.
