here is your answer :-

milkman add a very a small amount of baking soda to fresh milk because it prevents the milk getting a spoil or changing it into curd.


baking soda formula NaHCo3



as we know that milk contain lactic acid .
to neutralize the effect of lactic acid we use baking soda in fresh milk.


when we boil the baking soda then it result in decomposition of NaHCo3 result in coming out of carbon dioxide.

Becuz baking soda is a base which reacts with acids and neutralizes it. This prevents milk from getting sour and keeping it fresh for long time..
