A single compound though consists of atoms bonded chemically together according to a set ratio - e.g water is H2O: two hydrogens, one oxygen in a fixed ratio that never changes & can be easily expressed as a formula. In a mixture though, the proportions of the constituents can (and often do) change - e.g a mixture of a compound in aqueous solution may be concentrated by evaporation or diluted by the addition of more water. That cannot be expressed in simple terms using chemical formulae.
