 (a) Carbon dioxide (CO₂) gas released during fermentation process.
           (b) During fermentation process yeast kills itself by converting the sugars (C₁₂H₂₂O₁₁) found in grapes to ethyl alcohol. Alcohol can be separated from this mixture of yeast and other formed products by distillation process.

Products  formed during  fermentationC₁₂H₂₂O₁₁ + H₂O + (invertase) → C₆H₁₂O₆ (glucose) + C₆H₁₂O₆ (fructose)
C₆H₁₂O₆ (glucose)  + Zymase →2 C₂HOH (ethyl alcohol) + 2CO₂
