When a piece of mango kept at room temperature shrinks it would be due to a process called Evaporation.

However mango may also shrink when placed in high saline solution.This is due to a process called osmosis.

Osmosis is a process where the solvent (water) moves from a region of higher concentration to a region of lower concentration.
