Because pure sodium metal is very soft, it can easily be cut by knife.
Sodium metal forms ionic or electrovalent compound in nature which are hard, brittle, crystalline at room temperature like Sodium Chloride(NaCl).
Therefore, a piece of sodium chloride is harder than sodium metal.
