A pinch of sugar and yeast was added to dough and left it in warm place. After some time the dough rose. It also had sour smell. Why ? What would have happened if it was kept in refrigerator soon after preparing ? Why was sugar added to it ?

➡No need to activate the yeast– which is when you add a pinch of sugar to the war liquid/yeast start growing fastly in that.And it increases the volume of the dough.Sugar is added for the better and faster growth of the yeasts.
