It was burned and over heated. The sugar crystals will be hardened on the test tube surface.

A teacher took few crystal of sugar in a dry test tube and heated the test tube over flame the colour turned black because sugar is a complex compound which on heating undergoes decomposition reaction and water gets evaporated & leaving behind black carbon in the test tube.
