White powder that is used for baking is baking powder. It is a mixture of weak alkali and a weak acid and is used 2 increase volume of baked goods. It can also lighten the texture of cake or bread. Baking powder releases carbon dioxide gas into batter. This cause bubbles  that expand and make batter less dense . The chemical formula is NaHCO3(baking soda)CaHPO4... 2H2O(calcium phoshate)(C6H10O5) n (starch )

The white coloured powder is Baking Powder. It is usually made up of weak alkali and a weak acid. It helps to reduce the weight of cake and bread. The Co2 liberated makes the cake or bread to rise and become fluffy.
