The white powder which makes the bread soft and fluffy is baking soda(NaHCO3). The bread becomes fluffy because when it acts with hydrogen it gives out CO2 and H2O. So the CO2 gas which is released makes the bread soft and fluffy.


The baking soda is created when water and CO2 with ammonia is reacted with NaCl.


When powder is heated the following reaction takes place:

NaHCO3 (heat) ———> Na2CO3 + H2O + CO2
