this happens because zinc is more reactive than copper. it displaces copper from it's salt solution.
the reaction involved is
Zn + CuSO4(aq) ----------> ZnSO4(aq) + Cu
hence the rod keeps getting thinner as more zinc atoms from the rod comes into the solution in the form of ions
