Acetophenone doesn’t react with Sodium Bisulfite because it has a reactive carbonyl and its steric hindrance.
Basically, Acetopheneon is an electron loving species which can also be known as elctrophile. There will be a change in hybridization from Sp2 to Sp3 when the carbonyle group of undergoes the nucleaophilic addition. Hence the nucleophilic substitution reaction is not favorable in Acetophenon.
