Anyway, the turmeric sheet turns red. This is because turmeric is what we call a natural indicator. It indicates the pH range of a certain substance by its colour. If the substance which is being tested is an acid, the turmeric does not change colour. If the substance is a base, the colour changes to red. If the substance is neutral, like almost all indicators, turmeric does not change colour.

Most soap solutions mildly contain KOH or NaOH, which are both metal hydroxides that are very strong bases. So soap solution tends to show basic tendencies.

When soap solution is placed on a strip of turmeric paper, as it is a base, it makes the turmeric change into a red colour.
