Sunlight has lots of energy across the spectrum - glass blocks higher wavelength radiation like infrared, but allows lower wavelength like upper infra-red, visible light and above.
When sunlight passes through the glass and hits the black colored surfaces, the radiation is turned into heat, and the black surface also radiates out some of the energy, but it is in the infrared range. This infrared radiation cannot escape from the glass, so it continues to keep bouncing around, trapped.
Overall, more energy enters than exits, so the cooker gets hotter and hotter, eventually cooking the food.
This is what the greenhouse effect is.
The same effect happens in our atmosphere due to carbon dioxide - leading to excessive heating of the earth - a.k.a global warming
