The mechanism responsible for this Exosmosis.
Exosmosis is the passage of fluid from semipermeable membrane to outer surrounding medium which contains solution with lower concentration as compared to inner part with higher concentration which is bitter gourd here.
When we add salt the solution outside the bitter gourd become less concentrated due to which bitter gourd loses water.
