To protect them from becoming rancid

As food becomes rancid in presence of oxygen

So anti oxidants are to used to avoid exposure to oxygen

ANTI-OXIDANTS ARE GENERALLY ADDED TO THE FOOD CONTAINING FATS OR OILS THIS BECAUSE TO PROTECT THEM FROM BEING OXIDIZED AND ALSO TO PROTECT ITS QUALITY BECAUSE IF THE FOOD GETS OXIDIZED IT MAY LOOSE ITS QUALITY AND GET SPOILED.
